HALIBUT ENCHI"LADIES" Recipe
Ingredients
- 1 pound – Halibut Tortillas (flour is our fave)
- Green Enchilada Sauce
- 1 small can – Sliced Olives
- 1 brink – Cream Cheese
- 4 cups – Shredded Cheese
- 1 can – Black Beans
- 1 can – chopped Green Chilis
- sliced Green Onions
- 1 bunch – chopped Cilantro
Utilize a 9×9 or 13×9 or casserole dish of your choice!

Directions
Season halibut (with blackening seasoning OR seasoned salt OR old bay OR salt and pepper…this part is semi fool proof). Bake halibut in oven (or on stove) in a skillet until flaky. Chop or shred above while baking and flake fish. Lightly spray/oil baking dish and pour a layer of green enchilada sauce. On flat tortilla spread 1T. cream cheese, layer 2-3T. fish, 1T. beans, sprinkle of green chilies, cilantro and shredded cheese. Roll ends and then roll center to contain the ingredients and place in baking dish with seams down. Repeat with all tortillas until dish is full. Top with green onions, cilantro, olives, sauce to cover and a layer of shredded cheese. Bake at 350 for 30 min. Viola’
